With just a few household ingredients added to the mix, you’ll be baking up light and airy pancakes in no time. INGREDIENTS TO ADD TO ENTIRE 1 LB MIX (20 PANCAKES)
For 1/2 mix (10 pancakes), use 1 2/3 cup mix, 2 eggs, 3 Tbs. oil & 1 1/4 -1 1/2 cups milk.
INSTRUCTIONS
Whisk together eggs & oil. Gradually add the mix and most of the milk, whisking until smooth. Add more milk, as needed, to thin the batter so that it can be easily spooned into the pan, without being watery (the type of milk you use may change the thickness of the batter). Add berries, chips or whatever your heart desires!
FOR PANCAKES
No oil is needed with a non-stick pan. For others, lightly cover the bottom with oil. Heat to medium. Spoon batter into the pan and spread with a spoon to make it thinner. Cook until bubbles form, then flip. Cook until both sides are light brown. Let cool slightly before serving.
FOR WAFFLES
Make according to the waffle maker’s directions. To serve later, or for leftovers, refrigerate/freeze in a zip-top bag with wax paper between pancakes/waffles.
